Gluten Free Harvest Apple Bread





September; turning leaves, hay rides, laughter, bonfires, cider and apples.  I love fall. I love the crisp air, the crunchy leaves and the baking.  September makes me think of apples.

I love cooler weather and sweaters and baking.  It's much easier to bake with the air conditioner off and the windows wide open and the birds singing.

This GF Harvest Apple Bread has no refined sugar, plenty of fiber , moist and downright delicious. Make it with or without nuts and you have a satisfying breakfast or snack.

GLUTEN FREE HARVEST APPLE BREAD

2 cups gluten free white rice flour (my recipe Here)
1 cup gluten free oats
1/3 cup flax seed meal
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
1 envelope unflavored gelatin

Mix together and set aside.

1 cup butter (2 sticks) softened
1 cup maple syrup
3 eggs
1 cup buttermilk
2 -3 apples (2 cups)
1 cup nuts of your choice (optional)
2 cups topping mixture (my recipe Here)

Mix butter syrup and eggs together. Alternately add buttermilk and dry ingredients until moistened. 
Mix in the apples and nuts. Bake at 350 for 1 hour or until tooth pick comes out clean.
