Gluten Free Coconut Almond Brownie Cake (paleo, gluten free and dairy free)
I don't know why but many times dairy intolerance goes hand and hand with Celiac disease. Luckly I don't struggle with that yet. Dairy is a hard one to cut out. Here's one for my dairy free friends.
I love Almond Joy candy bars. While they are free of gluten ingredients, they have corn in them which I am sensitive to. So it's with that craving, I made this brownie cake. It has the chewiness of a brownie but soft like a cake and so moist. I wanted to make a coconut "whipping cream" frosting but it failed so I'll study up on that and make it another time. It doesn't need any topping, we had it with coffee and it was perfect.
Gluten Free Coconut Almond Brownie Cake
2/3 cup coconut oil (melted)
1 cup coconut sugar
1 cup maple syrup
1 envelop unflavored gelatin
1 teaspoon vanilla
4 eggs
Mix together and add:
2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup coconut flour
2 cups almond flour (finely ground)
1/2 cup dutch processed cocoa
2 cups unsweetened coconut
Mix until well blended. Spread into a greased 9X13 pan. Bake 350 for 30-35 minutes. Let cool on a wire rack.
