Gluten Free Chocolate Chip Cookie






One of the most universal cookie....or at least in my universe... is the chocolate chip cookie.  I've met very few people who don't like them.  Soft and chewy and chocolatey, these chocolate chip cookies will rival any around.....gluten free or not.

Gluten Free Chocolate Chip Cookie

2 cups (4 sticks) butter
1 1/2 cups coconut sugar (or white sugar)
1 1/2 cups  brown sugar

Cream sugar and butter together. Then add:

2 1/2 teaspoons vanilla extract
1 1/2 teaspoon salt
1 envelope unflavored gelatin (2 t) 
2 teaspoons baking soda

Blend with butter/sugar mixture. Then add:

2 Tablespoons coconut flour
2 Tablespoons potato flour
4 cups white flour mixture (for link to recipe click Here)

Mix into butter mixture slowly. Then add:

1 1/2 chocolate chips

Mix until chips are into the dough. Place in the refrigerator for 30 minutes.
Roll into balls and place on an ungreased cookie sheet about 2 in. apart. 
Bake 350 degrees for 10 minutes.
