Gluten Free Peanut Butter Fudge Brownie

3/4 cup softened butter
1/2 cup peanut butter (I used 1/2 crunchy and 1/2 creamy. You can use either)
1/2 cup white sugar
1/2 cup brown sugar
1 t vanilla
1 envelope gelatin
3 eggs
1 t baking soda
1 pinch salt (if using unsalted butter add 1 t. salt)
1/2 cup cocoa
1/2 cup almond flour
1/2 cup gluten free rice flour (or all purpose gf flour)
1/3 cup hot coffee

350 degrees, 8X8 pan (greased), 45 minutes

In a mixing bowl mix softened butter, peanut butter, sugars and vanilla until smooth. Add eggs and mix. Add soda, salt, flours and cocoa adding coffee as you mix. Mix just until flour is mixed in and then bake in a 350 degree oven for 45 minutes or until a tooth pick stuck in the middle comes out clean.
